Greenfield High School in Greenfield, Wisconsin wanted to revamp the foodservice program provided to their students. In order to do this, they needed to increase variety without sacrificing quality. They decided to establish an OVS system of food service, meaning Offer Versus Serve. This menu planning program gives students more choices, while still ensuring their dietary needs are met. To help Greenfield High School meet their goals, Boelter redesigned their school kitchen and cafeteria to improve flow and efficiency. We also installed state-of-the-art kitchen equipment and built a new quick-serve cafe to give students snack options throughout the day
