Since opening, the Zarletti family of restaurants has expanded to include Stubby’s, Rustico, and Salotto Zarletti. Rustico and Salotto Zarletti brought Boelter Contract and Design into the fold. Working with a tiny space and low ceilings at Rustico, the challenge was to design a basement prep kitchen and an upstairs cook’s line that could keep pace with high Rustico standards and volume.
At Salotto, Boelter Contract and Design worked with Brian Zarletti and his general contractor to develop kitchen and bar layouts that provide easy and efficient access to everything cooks, servers, and bartenders need. This was all in an effort to bring a little piece of Italy to their guests—whether it’s in the excellent food or the superb wines—every time.
